It is a good default for business applications for an unglamorous reason: the conventions are strong enough that a competent developer can open a project written by someone else and be productive the same day.
That matters more than it sounds. The most expensive property of custom software is not how long it takes to build, it is how much it costs to change three years later. A codebase written to framework convention — proper migrations, form requests, policies, resource controllers, queued jobs, tests where money moves — stays cheap to change. A clever codebase that does everything its own way gets progressively more expensive until someone proposes a rewrite.
